There are no shopping centers or stores around me, so I have to plan each meal I will eat for at least a week. Normally after a week or so, there are supplies and or materials I need to continue to work on the house.
I’ll usually set aside a day to leave the woods to get everything I need for another week or so. Deciding what I want to eat is usually the hardest thing I have to do because I never really know what I want. I’ve often said, I’m waiting for that new and exciting food. Food I’ve never had before and when I have it I’m going to be so amazed by the taste I’ll want to have it repeatedly. Well, that’s how it seems in my head, but in reality, I get something that tastes OK, it gives me energy and keeps the hunger away.
I have a Coleman two-burner propane stove on the door I’m building for the side of the house which is on saw horses in the kitchen area. I can cook a two-skillet meal with this setup if I need to. I don’t enjoy cooking in an almost half-finished kitchen, but during this visit, I’ve cooked more than I have in the past.
This morning I decided to have sliders made with rotisserie chicken I purchased a few days ago. Rotisserie chicken is my go-to since it’s already cooked. I only have to warm it up, add seasoning, and eat it with whatever I have available. I used the large cast iron skillet to heat the chicken (I don’t have a microwave oven, nor do I want one) and the small skillet to put a little burn on the slider rolls. I had a cup of tea to go along with the sliders, all in all, it was a pretty tasty breakfast.
